ABOUT US

Aldous Spirits is a Montreal-based company specializing in spirits creation. With ties in Mexico, Aldous boasts a great knowledge of all agave-based products. Created in 2019 by old friends in their quest for a festive mezcal that would represent them well, Aldous also offers an ever-evolving range of products. By working with local vendors, whether in Quebec or in Mexico, we hope to build a strong web of partners in order to become the Canadian agave product reference. We are involved in every step of the production and marketing of our products and we think that it’s this attention to detail that makes all the difference. We are not importers, we are producers.

Hailing from the beating heart of mezcal’s most renowned and mythical region, Oaxaca, our master mezcalero Pedrito Martinez Jimenez is a true virtuoso of his craft. His palenque, located in the picturesque hills just outside Santiago Matatlan, is where the true magic happens. Using the ancestral knowledge bestowed upon him by the 5 generations of master mezcaleros from which he is descended, Pedrito masterfully creates a mezcal that is both a reflection of his talents as well as an ode to his heritage. Having been raised in a palenque all his life, Pedrito is the true embodiment of what being rooted in mezcal really means.

As far as he can remember, he has been in contact with every step of the process, which gives him a very special grasp on the intricacies of creating a unique flavor profile. His relationship with agave is not only one of farming and harvesting, it is mostly one of respect and care, which is why we firmly believe that Don Pedro is the true key to sueño de alden’s success.
